"Oh....Turkey Quiche"
(A Yummy Entree "Deesh")

Quiche Crust: 
   4 1/2 Cups Cooked Turkey - diced
   6 Slices Bread - cubed
   1/2 Cup Onion - chopped
   3/4 Cup Celery - diced
   1/2 Cup Green Pepper - chopped
   1/2 Teaspoon Poultry Seasoning
   Salt & Pepper to Taste
      1.  Place diced turkey, cubed bread, chopped onion, diced celery,
           chopped green pepper and seasoning in a large bowl.
      2.  Mix all together using a large spoon
      3.  Place quiche crust mixture into a greased 9 x 13" glass pan.

Quiche Filling:
  
3 Eggs
   3/4 Cup Milk
   3/4 Cup Chicken Broth
      4.  In a medium bowl, beat together eggs, milk, and chicken broth.
      5.  Pour this mixture over the quicke crust in the glass pan.
      6.  Cover and let stand overnight or at least 5 hours in the
             refrigerator.

Quiche Topping:
  
1 Cup Cheddar Cheese
   1/2 Cup Melted Butter
      7.  Before baking, sprinkle cheese and butter over the quiche filing.
      8.  Bake at 325 degrees for 45 minutes to 1 hour.
      9.  While baking, heat the following quiche sauce ingredients in the
           microwave, stirring occasionally.

Quiche Sauce:
  
1 Can Cream of Mushroom Soup
   1 Can Cream of Chicken Soup
   1/2 Cup Milk
   1 Can chicken Broth (less the 3/4 cup use in in filling)  

 To Serve :
Cut into squares. Pour quiche sauce over squares and serve.Serve on romaine lettuce leaves along with a serving of cranberries.

Serves: 15 people
This entree is a great dish to make a day ahead of time!
