"Yummy Turkey Burritos"
(Entree)
Second Place Entree Winner for the year 2000

Serves 6 to 8

Ingredients:
  4 lbs. Boneless Turkey Breast
  1 can enchilada sauce
  1 dash of salt
  1 teaspoon pepper
  1 can of olives
  6 to 8 flour tortillas
  1 can refried beans
  1 bag of cheddar cheese
  6 to 8 spoonfuls of sour cream
  1 tablespoon of hot sauce

 

 Methods:

Allow 4 to 4 ½ hours to prepare.  Preheat oven to 350o.   Place Boneless Turkey Breast in a roasting pan and then place in oven to bake for 3 hours.  Take out and let cool off for 45 minutes to an hour.  Cut turkey into small chunks.  Put turkey chunks into a medium size bowl.  Mix in 1 can of enchilada sauce, or enough to give the turkey a red tint.  Then add salt and pepper into the mixture.  Cut olives into small slices and place in a small bowl by themselves.  Place as many tortillas on as many plates as desired.  They must be microwavable plates.  Then spread out a layer of refried beans on the tortillas.   Take turkey mix and put 2 to 3 spoonfuls of the mix in the middle of the tortillas.   Add as much cheddar cheese as desired to the tortillas and place in microwave and heat up for 1 minute.  Take out of microwave and add as many black olives as wanted on to the turkey/cheese mixture on the tortillas.  Then roll up tortillas.   Place enough sour cream and hot sauce on top to satisfy your appetite.  Eat Burritos while warm and enjoy!!
