"Marinated Turkey
Medallions in Sweet and Sour Sauce"

First Place Entree Winner for the year 2000
Yield: Four servings
Ingredients:
1 lb. boneless, skinless turkey breast
1 ½ cups chicken broth
1 T. Soy Sauce
1 15 oz. can pineapple tidbits
2 T. brown sugar
1 T. vinegar
2 T. cornstarch
¼ cup cold water
drop of red food coloring
rice, cooked (four servings)
Methods:
1. Mix the soy sauce and chicken broth together in a flat container. Place the
turkey breast in the soy sauce mixture. Cover and refrigerate at least four hours.
2. Remove from the refrigerator. Slice turkey crosswise into ¼"
medallions.
3. Drain pineapple, reserving the juice.
4. Cook turkey in a skillet using ½ cup chicken broth as the
cooking liquid.
5. Remove turkey from heat when thoroughly cooked, set aside.
6. Measure the reserved pineapple juice, add water to make one cup.
7. In small saucepan, combine juice, brown sugar and vinegar. Heat.
8. In small container, mix cornstarch and ¼ cup cold water.
9. Gradually stir into hot juice mixture. Heat to boiling and cook until
thickened.
10. Stir in food coloring.
11. Stir in pineapple and heat through.
12. Place turkey over cooked rice. Pour sauce over the top and serve.Submitted
