Cheesy Turkey Chowder

INGREDIENTS

  • 3 to 4 cups diced cooked turkey
  • 1 quart turkey or chicken broth
  • 4 cups milk
  • 2 cups Velveeta cheese
  • 1 tsp. salt
  • pepper to taste
  • 3/4 cup flour
  • 2 cups chopped celery
  • 2 cups chopped potatoes
  • 2 cups chopped carrots
  • 1 tbls. chicken soup base
Method:

Cook vegetables separately in 4 tbls. margarine, until tender.  Heat milk and broth, add chicken base.  Make paste of the flour and a small amount milk, add to heated milk and broth, cook until slightly thickened (about 1 minute).  Add salt, pepper, vegetables, cooked turkey and cheese to heated broth and milk mixture.  Heat until cheese melts, but do not boil.
