Fruity Turkey Salad

INGREDIENTS

  • 3 cups cooked turkey, diced
  • 1 1/2 cups pineapple chunks
  • 1 (11oz.) can mandarin Oranges
  • 1 cup diced celery
  • 1/2 cup sunflower seeds
  • 2 tbls. oil
  • 2 tbls. orange juice
  • 2 tbls. vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. parsley
  • 1/2 cup mayonnaise
Method:

Combine turkey, fruit, celery, sunflower seeds, salt, and parsley.  Mix oil, orange juice, and vinegar.  Pour over turkey and fruit mixture and refrigerate for 1 to 2 hours.  Drain.  Blend mayonnaise with turkey and fruit mixture.
