Turkey Cheese Casserole

INGREDIENTS

  • 8 to 10 oz. box croutons
  • 1 stick margarine
  • 1 cup water
  • 3-4 cup cooked, diced turkey
  • 1/2 cup chopped celery
  • Shredded cheese - 1/2 cheddar, 1/2 Monterey jack
  • 1/2 cup chopped onion
  • 1/2 cup mayonnaise
  • 2 eggs
  • 1 1/2 cups milk
  • 1 can cream of mushroom soup
Method:

Melt margarine, add water, pour over croutons and mix.  Put half in greased 9x13 pan.   Mix turkey, celery, onion and mayonnaise.  Pour over crouton mixture in pan.   Cover with remaining half of croutons.  Beat egg with milk, pour over above and refrigerate overnight.  Next day, pour mushroom soup on top.  Bake 45 minutes at 325°. Cover with cheese and bake 10 minutes longer.
